MEDITERRANEAN STYLE PIZZA
Ingredients
4 pita breads
1 large brinjal
1 tablespoon oil + as required
Salt to taste
¾ cup yogurt
½ tablespoon chopped garlic
1 teaspoon chopped fresh parsley + as required
Dried oregano for sprinkling
Chopped red chillies as required
Mediterranean tomato sauce
2 medium tomatoes, finely chopped
1 tablespoon oil
½ teaspoon cumin seeds
½ tablespoon chopped garlic
1 teaspoon red chilli flakes
1 teaspoon fennel seeds
2-3 tbsps tomato puree
1 teaspoon dried oregano
Method
1. To prepare Mediterranean tomato sauce, heat oil in a non-stick pan. Add cumin seeds and garlic and sauté for 30 seconds.
2. Add chilli flakes, fennel seeds and sauté. Add tomatoes and sauté for 3-4 minutes.
3. Cut brinjal into roundels. Apply some oil and sprinkle some salt on both sides and rub well.
4. Heat 1 tablespoon oil in a non-stick pan. Place the prepared brinjal roundels and cook from both sides till golden brown.
5. Add tomato puree and dries oregano, mix and cook for 1-2 minutes. Switch off heat and cool.
6. Blend the sauce mixture into a smooth mixture.
7. To prepare dressing, mix together yogurt, garlic and 1 teaspoon parsley in a bowl. Add salt and mix well.
8. To prepare one pizza, spread some prepared tomato sauce on one pita bread, place 2 cooked brinjal roundels and drizzle some dressing. Sprinkle some dried oregano and put some parsley and red chillies on top.
9. Serve immediately.
