CHILLI IDLI
Ingredients
15-20 idlis, cut into quarters
2-3 green chillies, finely chopped
2 tablespoons cornflour
1 tablespoon oil + for deep-frying
1 tablespoon chopped garlic
½ tablespoon chopped ginger
1 small onion, cut into quarters and layers separated
1 small red capsicum, cut into cubes
1 small yellow capsicum, cut into cubes
1 tablespoon soy sauce
1 tablespoon red chilli sauce
½ cup vegetable stock
Salt to taste
Crushed black peppercorns to taste
1 tablespoon cornflour slurry
Diagonally sliced spring onion greens for garnishing
Method
1. Dust idli pieces with cornflour in a bowl.
2. Heat sufficient oil in kadai. Deep-fry the idli pieces till lightly brown. Drain on absorbent paper.
3. Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and green chillies and sauté till fragrant.
4. Add onions, red and yellow capsicums, mix and cook for 2-3 minutes.
5. Add soy sauce and chilli sauce and mix well. Add stock, stir to mix and bring to a boil.
6. Add salt and crushed peppercorns and mix well. Add cornflour slurry and mix well. Add fried idli pieces, mix well and cook for a minute.
7. Garnish with spring onion greens and serve hot.
