MALAI KOFTA CURRY Ingredients Green cardamom powder for sprinkling Kofta 100 grams cottage cheese (paneer), grated 50 grams mawa/khoya, grated 1 tablespoon cornflour Salt to taste 1 green chilli, finely chopped Oil for deep-frying Raisins as required Gravy 2 tablespoons oil 4 green cardamoms 2 green chillies, slit ¾ cup boiled onion paste 1 tablespoon ginger-garlic paste ½ cup cashewnut-melon seed (kaju-magaz) paste ½ cup yogurt 2 tablespoons butter ¾ teaspoon green cardamom powder ½ teaspoon white pepper powder ½ teaspoon garam masala powder Salt to taste ¼ cup fresh cream Method 1. To make the koftas¸ mix together cottage cheese, mawa/khoya, cornflour, salt and green chilli in a bowl. 2. Heat sufficient oil in a kadai. 3. Divide the mixture into equal portions, stuff each with a raisin and shape into balls or koftas. 4. Deep-fry the koftas in hot oil till golden brown. Drain on absorbent paper and set aside. 5. To make the gravy, heat oil in a non-stick pan. Add cardamoms and green chillies and sauté for 1 minute. 6. Add onion paste and sauté for 1 minute. Add ginger-garlic paste and cashewnut-melon seed paste, mix and sauté for 2-3 minutes. 7. Add 2 cups water and yogurt, mix and bring to a boil. Add butter, cardamom powder, pepper powder, garam masala powder and salt, mix well and cook for 1 minute. 8. Strain the gravy through a sieve into a bowl. 9. Pour the gravy back into another non-stick pan, place on heat and bring to a boil. Switch off heat, add cream and stir. 10. Place the koftas in a serving bowl and pour the gravy on top.
