RAWA CHEESE DOSA
Ingredients
2 cups semolina (rawa)
1 cheese grated
1 cup rice flour
½ cup refined flour (madia)
12 cashewnuts, crushed
12-15 black peppercorns, crushed
1 inch piece ginger, finely chopped
4 green chillies, finely chopped
¼ dry coconut, grated
Salt to taste
2 tablespoons fresh coriander leaves, chopped
1 teaspoon cumin seeds
Ghee to shallow fry
Method
1. Take rawa in a bowl. Add rice flour, maida and water and whisk well. The batter should be quite thin. Rest the batter for fifteen minutes.
2. Add cashewnuts, crushed peppercorns, ginger, green chillies, coconut, salt, coriander leaves and cumin seeds and mix well. Set aside for 5 minutes.
3. Heat a tawa and grease it with ghee. Rub with a wet muslin all over.
4. Pour a ladleful of batter and spread it all around. Drizzle ghee all around and cook till the underside turns crisp and golden. Grate cheese on top. The sides of the dosa will start separating from the tawa.
5. Serve hot.
