CHICKEN AND ARTICHOKE PIZZA
Ingredients
¾ cup boiled and shredded chicken
100 grams tinned artichoke
Readymade pizza dough as required
Refined flour for dusting
Pesto for spreading
8-10 garlic cloves, sliced and fried
6-7 green olives, pitted and sliced
6-7 black olives, pitted and sliced
Crushed black peppercorns to taste
Salt to taste
10-12 fresh basil leaves
50 grams mozzarella cheese
Olive oil for drizzling
Method
1. Preheat oven at 180° C. Dust a baking tray with some flour.
2. Dust the worktop with some flour. Place the dough on it and knock back to release excess air. Roll out into a square sheet.
3. Place the sheet on the dusted tray and dork using a knife. Spread pesto and top with artichoke, chicken, garlic, green olives and black olives. Sprinkle crushed peppercorns, and salt on top.
4. Place few basil leaves, grate mozzarella cheese and drizzle olive oil on top. Put the baking tray in preheated oven and bake for 15-20 minutes.
5. Cut into wedges and serve.
