PURANI DILLI STYLE MUGHLAI MUTTON
Ingredients
750 grams mutton cut into 2 inch pieces on the bone
1 tbsp oil
1½ tbsps pure ghee
2 bay leaves
5-6 black peppercorns
3-4 cloves
2-3 green cardamoms
1 inch cinnamon stick
1 cup onion puree
1 tbsp ginger-garlic paste
Salt to taste
1½ tsps red chilli powder
2 dried red chillies
1 small piece of mace blade (javitri)
¾ cup yogurt
¾ cup browned onion paste
¼ cup cashew nut paste
1½ tbsps Tata Sampann Meat Masala
1 tbsp screwpine (kewra) water
Fried onion for garnish
Chopped fresh coriander leaves for garnish
Method
1. Heat oil and ghee in a non-stick deep pan add bay leaves black peppercorns cloves and green cardamoms cinnamon stick and cook till they turn fragrant.
2. Add onion puree and mix and cook till the mixture turns golden brown. Add ginger-garlic paste and sauté for a minute.
3. Add mutton salt red chilli powder dried red chillies and mace blade and sauté on high heat 3-5 minutes.
4. Add yogurt browned onion paste and cashew nut paste and mix well. Cook for 5-6 minutes.
5. Add Tata Sampann Meat Masala and sauté for 1 minute. Add 1½ cups water and mix well. Cover and cook for 30-35 minutes.
6. Pour kewra mix switch the heat off and allow to rest for 5 minutes. Transfer into a bowl garnish with fried onion and chopped coriander. Serve hot.
