PINEAPPLE SHEERA STUFFED WITH ICE CREAM Ingredients ¼ cup fresh pineapple puree ½ medium pineapple, peeled and cut into small pieces ¾ cup fine semolina 2 scoops vanilla ice cream ½ cup milk ¾ cup sugar A pinch saffron strands ½ cup ghee 1 teaspoon green cardamom powder 6-8 raisins + for garnishing 5-7 cashewnuts + for garnishing 5-7 almonds + for garnishing Method 1. Line a glass bowl with a cling film. 2. Heat milk in a non-stick pan. Add ½ cup water and sugar, mix continuously and cook till sugar melts. Switch off heat, add saffron strands and set aside for 18-20 minutes. 3. To prepare sheera, heat ghee in another non-stick pan. Add semolina and sauté on low-medium high heat for 5-7 minutes or till golden. Add milk mixture and mix well. Add pineapple puree and pineapple, mix and cook till well incorporated. 4. Add cardamom powder and mix well. Add raisins, broken cashewnuts and roughly chopped almonds, mix and cook for 1-2 minutes. Remove from heat and set aside for 2-3 minutes. 5. Fill the lined glass bowl with some sheera and create a cavity in the centre using a spoon. Put vanilla ice cream in the centre and level it out. Invert the prepared bowl onto a serving platter. 6. Serve immediately garnished with nuts.
