A unique burger to satiate your cravings. Tikki is made using Kabuli Chana making it even more delicious.
KABULI CHANA BURGERS
Ingredients
1½ cups chickpeas (kabuli chana) soaked
4 mini whole wheat burger buns
Oil for deep-frying
2 stalks spring onion greens chopped
3 garlic cloves
8-10 fresh coriander sprigs
Salt to taste
3-4 dried breadcrumbs
1-2 tbsps lemon juice
½ tsp red chilli powder
A pinch baking soda
2-3 tbsps yogurt
4 x 2 inch lettuce leaves
4 tomato roundels
4 cucumber roundels
4 onion roundels
Method
1. Heat sufficient oil in a kadai.
2. Grind together chickpeas spring onion greens 2 garlic cloves coriander sprigs salt and breadcrumbs to make a coarse mixture. Add lemon juice and grind again. Transfer in a bowl.
3. Add chilli powder and baking soda and mix well.
4. Divide the mixture into equal portions shape them into patties and roll the edges on the worktop.
5. Deep-fry the patties in hot oil till golden and crisp. Drain on absorbent paper.
6. To prepare burnt garlic yogurt sauce roast remaining garlic clove directly on the flame till golden. Transfer on the worktop and finely chop.
7. Take chopped garlic in another bowl. Add salt and yogurt and mix well.
8. Heat a non-stick tawa.
9. Halve the buns horizontally and roast from both sides till golden. Transfer on the worktop.
10. Place one lettuce leaf tomato roundel cucumber roundel and 1 pattie on top of the roasted base of a bun.
11. Put some burnt garlic yogurt sauce and 1 onion roundel on top. Cover with the remaining bun half and insert a skewer in the center. Similarly prepare the remaining burgers.
12. Serve immediately.
