MOUSSE CAKE
Ingredients
1 small round dark chocolate cake slice
1 tablespoon gelatin
1 cup fresh cream
¾ cup chopped white chocolate
1½ cups whipped cream
1 cup melted dark milk chocolate
1 cup melted dark chocolate
Sugar syrup as required
Cocoa powder for dusting
White chocolate chips for garnishing
Fresh mint leaves for garnishing
Method
1. Put gelatin in a microwave proof bowl. Add 3-4 tablespoons water, mix and set aside to bloom. Microwave for 1 minute and mix well.
2. Heat cream in a non-stick pan and bring to boil.
3. Put white chocolate in a bowl. Add hot cream and mix till the chocolate melts. Add 1 tablespoon of bloomed gelatin and mix well.
4. Divide whipped cream into 3 equal portions.
5. Add 1 portion of whipped cream into white chocolate mixture and fold well. Similarly, prepare milk chocolate mixture and dark chocolate mixture.
6. Place one slice of cake sponge in a spring bottom cake tin. Spread some sugar syrup and layer with some dark chocolate mousse and tap. Make another layer of dark milk chocolate mousse and white chocolate mousse and tap.
7. Make small pecks on the above layer using the back of the spoon. Refrigerate 1-2 hours. Remove from refrigerator and demould.
8. Dust some cocoa powder on top and garnish with white chocolate chips and mint leaves.
9. Cut into wedges and serve.
