PAV BHAJI RECIPE
Ingredients
4 medium potatoes boiled peeled and grated
8 pavs
1½ tablespoons pav bhaji masala + for sprinkling
1 tablespoon oil
2 medium onions finely chopped
1 tablespoon ginger-garlic paste
3 medium tomatoes finely chopped
1 tablespoon tomato paste
¼ cup boiled and mashed carrots
1 medium green capsicum finely chopped
1 tablespoon butter + as required
1 tablespoon finely chopped fresh coriander leaves
Method
1. Heat oil in a deep non-stick pan. Add half of onion and sauté till translucent.
2. Add ginger-garlic paste tomatoes tomato paste and carrots mix well and cook till tomatoes turn soft and pulpy.
3. Add salt and 1 tablespoon pav bhaji masala mix well and cook for 2 minutes. Add potatoes and water as required mix well cover and cook for 2 minutes.
4. Add capsicum and mix well. Add some more water and remaining pav bhaji masala mix well and simmer for a minute.
5. Add butter and coriander leaves mix well cover and simmer for 5 minutes.
6. Halve pavs horizontally apply some butter and sprinkle some pav bhaji masala on them. Serve with hot bhaji.
