SPROUTS AND METHI THEPLA
Ingredients
½ cup mixed sprouts boiled
½ cup yogurt
1½ cups whole wheat flour + for dusting
2 tbsps Bengal gram flour (besan)
½ tsp red chilli powder
½ tsp carom seeds (ajwain)
Salt to taste
¼ tsp turmeric powder
1 tsp white sesame seeds
½ tsp ginger-green chilli paste
1 cup freshly chopped fenugreek leaves (methi)
1 tbsp oil + for drizzling
Chunda to serve
Method
1. In a blender jar add sprouts and 2 tbsps yogurt and blend to a fine paste.
2. In a large bowl add whole wheat flour besan red chilli powder ajwain salt and turmeric powder and white sesame seeds ginger-green chilli paste chopped methi and prepared paste. Mix well.
3. Add remaining yogurt and mix well. Knead to soft dough. Add oil and mix again.
4. For making theplas take a portion of the dough and shape it into a ball. Dust the work top with flour and place dough ball on it. Slightly flatten it and roll it into a thin disc.
5. Heat a non-stick tawa place the thepla on it and cook for a few seconds on both sides. Drizzle oil on each side and cook till golden brown.
6. Serve hot with chunda.
