Follow this recipe step by step and you'll have a plate-full of nachos topped with refried beans salsa and cheese sauce that's just so yummy that you'll make it at every chance you get!
RECIPE:
Ingredients
½ cup corn meal
1 tbsp oil + for greasing + for deep frying
¾ tsp turmeric powder
1 cup refined flour
Salt to taste
Paprika powder for sprinkling
Black olive slices for garnish
Pickled jalapeños slices for garnish
Fresh parsley sprig for garnish
For Refried Beans:
2 cups boiled kidney beans (rajma)
1 tbsp oil
2 tsps finely chopped garlic
1 medium onion finely chopped
1 medium tomato finely chopped
Salt to taste
½ tsp paprika powder
½ tsp cumin powder
Crushed black peppercorns to taste
For Cheese Sauce:
2 tbsps butter
2 tbsps refined flour (maida)
1 cup milk
1 cheese slice
For Salsa:
2 medium tomatoes deseeded and finely chopped
1 small onion finely chopped
1 green chilli chopped
2 tsps lemon juice
2 tbsps chopped fresh coriander leaves
1 tbsp tomato juice
Salt to taste
Method
1. For the dough heat oil in a non-stick pan add turmeric powder and mix well. Cook for a few seconds and take the pan off the heat.
2. Take refined flour in a large bowl. Add corn meal and the prepared oil salt and sufficient warm water and knead to a soft dough. Set aside for 10-15 minutes.
3. For the refried beans heat oil in a non-stick wok add 2 tsps finely chopped garlic and sauté till golden brown.
4. Add onion and mix well. Cook till golden brown. Add tomato and sauté well. Add salt mix well and cook till pulpy.
5. Add paprika powder and cumin powder and mix well. Add kidney beans mix well and mash with the back of the spoon.
6. Add ¼ cup water and mix well. Add crushed black peppercorns and mix till well combined. Take the pan off the heat.
7. For the cheese sauce heat butter in another non-stick pan and let it melt. Add refined flour and sauté well.
8. Add milk and stir well. Tear the cheese sauce and switch the heat off. Whisk till the cheese melts.
9. For the salsa take tomatoes onion green chilli lemon juice chopped coriander and tomato juice and mix well. Add salt mix and set aside.
10. To make the nachos grease the worktop with a little oil. Take a portion of the prepared dough and shape it into a ball and slightly flatten it.
11. Place the dough on the greased worktop and roll it into a thin sheet. Trim the sides and cut into equal strips. Prick all over with fork and cut into triangles using a pizza cutter.
12. Heat sufficient oil in a kadai drop in the prepared triangles and deep fry till golden brown and crisp. Drain on an absorbent paper. Sprinkle paprika and salt while the nachos are hot and toss well
13. To assemble take the nachos on a serving plate. Add the prepared refried beans salsa and drizzle cheese sauce. Garnish with olives slices jalapeños slices and parsley sprig. Serve immediately.
