EGGLESS BROOKIES
Ingredients
Brownie
½ cup butter
1 cup chopped dark chocolate
¼ cup yogurt
¾ castor sugar
1¼ cups refined flour
1 tsp baking powder
A large pinch of salt
2 tbsps coffee decoction (2 tsps coffee powder mixed with 2 tbsps warm water)
¼ cup milk
1 tsp vanilla essence
Cookies
½ cup castor sugar
½ cup butter
1¼ cups refined flour
¼ tsp baking soda
¼ tsp baking powder
Small pinch of salt
¼ cup milk
⅓ cup chocolate chips + for sprinkling
1 tsp vanilla essence
Method
1. Preheat the oven at 180ºC.
2. To make the brownie mixture mix together butter and dark chocolate in bowl microwave till the mixture melts while stirring in between every 30 seconds.
3. Take yogurt in a large bowl add castor sugar and mix well.
4. Add the chocolate-butter mixture and mix well till combined. Sift refined flour baking powder and salt directly into the mixture. Add coffee decoction milk and vanilla essence. Gently fold till well combined.
5. For the cookie dough take butter in another large bowl. Add castor sugar and beat with the help of an electric beater till the mixture becomes light and fluffy.
6. Sift refined flour baking soda baking powder and salt directly into the bowl. add milk chocolate chips and vanilla essence and mix till well combined.
7. Transfer the brownie mixture in a greased and lined square baking tin and spread evenly.
8. Take small portions of the cookie dough and randomly place them over the brownie mixture and sprinkle some chocolate chips. Place this in the preheated oven and bake for 30-35 minutes.
9. Remove the baking tin out of the oven allow to cool completely demold and cut into squares. Arrange on serving plate and serve.
