PESHAWARI NAAN
Ingredients
3 cups refined flour (maida)
1 teaspoon yeast
3 teaspoons castor sugar
1 teaspoon baking powder
1 teaspoon salt
1 cup milk
2 tablespoons butter + for brushing
¼ cup coarsely ground pistachios
¼ cup white sesame seeds (safed til)
¼ cup onion seeds (kalonji)
¼ cup melon seeds (magaz)
½ cup mozzarella cheese
Method
1. Preheat oven at 180º C.
2. Put refined flour, yeast, salt, sugar and baking powder in a bowl. Mix well. Add milk and knead into a soft dough. Set aside for 15 minutes.
3. Divide the dough into eight equal portions and shape into balls. Pat each of them into roundels with your finger tips and pull one side to give it a triangular shape.
4. Brush with some butter on one side of the, sprinkle some white sesame seeds, onion seeds, crushed pistachios and melon seeds
5. Roll with rolling pin, put the prepared naans on a baking tray and bake in the preheated oven for 5-10 minutes.
6. Remove from oven, grate cheese on top and put in the baking tray again till cheese melts. Remove and brush with remaining butter.
7. Cut into wedges and serve.
