HAZELNUT SHORTBREAD SANDWICH Ingredients ¾ cup ProV Premium Hazelnut 1 cup refined flour (maida) ½ cup softened butter ½ cup powdered sugar 1 tsp vanilla essence Ganache ½ cup fresh cream 1 cup chopped dark chocolate Method 1. Preheat the oven at 180ºC. 2. Put the ProV Premium Hazelnut and refined flour in a food processor and process to a fine powder. 3. Take butter in a large bowl add powdered sugar and mix till well combined. Add vanilla essence and mix well. Add the processed powder and mix till everything comes together and forms a dough. 4. Take a portion of the dough on a parchment and cover it another parchment paper. Roll it into a rectangular sheet of medium thickness. Cut into portions using a crinkle cookie cutter. Arrange the shortbread cookies at equidistance on a baking tray. 5. Place the baking tray in the preheated oven and bake for 8-10 minutes. 6. To make the ganache heat fresh cream in a pan. Let is come to a boil. Add the dark chocolate and mix well. Cook till it melts. Take the pan off the heat and allow to cool completely. 7. Bring the shortbread cookies out of the oven and allow to cool completely. 8. Pipe out a portion of the chocolate ganache over half of the shortbread cookies and cover with the remaining ones to make a sandwich. 9. Arrange on a serving plate and serve.
