SOM TAM Ingredients 2 cups shredded raw papaya 1 stalk spring onion greens, cut into strips 1 small carrot, grated 8-10 cherry tomatoes, halved 3-4 tablespoons roasted peanuts Salt to taste Few iceberg lettuce leaves Dressing 2 fresh red chillies, sliced 5-6 garlic cloves 1 tablespoon roasted peanuts 1 teaspoon brown sugar 1 tablespoon lemon juice 1 teaspoon soy sauce 1 teaspoon tamarind pulp Method 1. To prepare dressing, crush red chillies in a mortar using a pestle. Add garlic cloves and crush. 2. Add peanuts and brown sugar and crush again. Add lemon juice, soy sauce and tamarind pulp and mix well. 3. Mix together raw papaya, spring onion green strips, carrot, cherry tomatoes, peanuts and salt in a bowl. Add dressing and mix well. 4.
