Marinated lamb chops grilled to perfection topped with sauce.
BRAZILIAN GRILLED LAMB CHOPS
Ingredients
1 lamb rack, excess fat trimmed
Zest of 1 Italian lemon
¼ cup extra virgin olive oil + for brushing
½ cup white wine
1 tablespoon chopped fresh mint leaves
Crushed black peppercorns to taste
Salt to taste
Juice of ½ Italian lemon
2 tablespoons refined flour (maida)
½ cup lamb stock
Fresh parsley sprig for garnishing
Method
1. Cut the lamb rack into chops.
2. Mix together lemon zest, olive oil, white wine, mint leaves, crushed peppercorns and salt in a bowl. Add lamb chops and lemon juice, mix and set aside to marinate for 15-20 minutes.
3. Heat a non-stick grill pan and brush with some olive oil. Place the marinated chops in it and grill till fully cooked and evenly done. Remove from pan and set aside.
4. Pour the leftover marinade in the pan, add flour, mix and sauté for a minute. Add lamb stock, mix and simmer till the sauce thickens.
5. Strain the sauce and pour over lamb chops. Garnish with parsley and serve hot.
