Enjoy Healthy & Fresh Turmeric Soup.
FRESH TURMERIC SOUP
Ingredients:
2 inch fresh turmeric peeled and chopped
1½ tbsps oil
2 inch celery stick chopped
2 inch ginger piece chopped
12-16 black peppercorns
2 bay leaves
2 tbsps chopped garlic
12-16 coriander stems
Salt to taste
2 fresh red chillies chopped + for garnish
12-15 French beans diagonally sliced
12-15 baby corns diagonally sliced
12-15 button mushrooms thickly sliced
200 grams flat rice noodles
2 medium carrots peeled and cut into thin strips
100 grams firm tofu cut into 1 cm cubes
Chopped Spring onion greens for garnish
Method:
1. Heat oil in a deep nonstick pan. Add fresh turmeric celery ginger black peppercorns bay leaf and mix well. Sauté for a minute.
2. Add garlic coriander stems and mix well. Sauté for a minute.
3. Add 5-6 cups water and mix well. Add salt fresh red chilli and mix well.
4. Allow to boil for 20 minutes.
5. Strain the mixture and transfer in the same pan. Once it comes to a boil add French beans baby corns mushrooms and mix well. Cook for 4-5 minutes. Add rice noodles carrot strips and adjust salt. Cook for 3-4 minutes.
6. Add tofu and mix well.
7. Transfer into serving bowl. Sprinkle spring onion greens fresh red chillies and serve hot.
