CHICKEN VEGGIE WRAP Ingredients 4 tortillas 16 chicken salamis Beetroot hummus for spreading 8 cheese slices 1 medium red capsicum, cut into thin strips 1 medium yellow capsicum, cut into thin strips 1 medium green capsicum, cut into thin strips ¼ medium purple cabbage, shredded 1 medium cucumber, peeled, halve, deseeded and cut into thin slices Few iceberg lettuce leaves Method 1. To prepare one wrap, spread some beetroot hummus on a tortilla. Arrange 2 cheese slices in the center of the tortilla. 2. Arrange red capsicum strips and yellow capsicum strips on one side. Place 3-4 chicken salamis on top of cheese slices and green capsicum strips, purple cabbage and cucumber slices on the other side of the tortilla. 3. Place 1-2 torn iceberg lettuce leaves on top of chicken salami and roll it. 4. Halve and place in the center of the serving platter. Spread some beetroot hummus on the sides of the platter and serve.
