Fried rice is a wholesome one-dish meal that is enjoyed by both young and old this dish is tangy spicy and the perfect way to use up all the leftover ingredients in your kitchen.
WINTER VEG FRIED RICE
Ingredients
2 tbsps oil
Green garlic- I will chop
1 inch ginger finely chopped
2-3 fresh red chillies finely chopped
1 small spring onion bulbs chopped
50 grams surti papdi- I will cut
10-15 French beans diagonally chopped into ½ inch pieces
1 small red winter carrot cut into ½ inch pieces
50 grams purple yam (kandh) cut into ½ inch cubes and blanched
¼ cup green and red moongre- I will chop
1 cup cooked long grain Basmati rice
2 tbsps fresh toovar dana
2 tbsps fresh green peas
2 tbsps winter onion- I will cut
Salt to taste
1 tbsp dark soy sauce
1 tbsp green chilli sauce
1 tsp vinegar
Toasted white and black sesame seeds for garnish
Method
1. Open the surti papadi and tear into half finely chop 6-8 red radish pod 4-5 finely chop French beans and set aside.
2. Heat in non-stick pan add 1 ½ tbsps. Mix black and white sesame seeds .Let them splutter.
3. Heat 2 tbsps sesame oil in a non-stick pan add ½ tbsps. Ginger 1 tbsp garlic chopped 1 fresh red chilli surti papadi French beans and sauté for 2-3 minutes.
4. Add 1 small red carrots chopped and sauté for 3-4 minutes. Add 1 spring onion bulb chopped and mix well.
5. Add 8-10 green garlic greens chopped radish pod 2 tbsps green peas salt mix well and cook for 3-4 mintues .
6. Add cooked rice boiled purple yam ½ tsp dark soya sauce1 tsp green chilli sauce and toss well. SWITCH OFF the heat and add 1 tsp vinegar mix and add spring onion greens and take pan off the heat.
7. Serve hot garnish with tossed mix sesame seeds.
