BAKED POTATO WITH EGGS Ingredients 4 large potatoes with skin, boiled 4 eggs Salt to taste Crushed black peppercorns to taste 3-4 stalks spring onion greens, sliced 30 grams processed cheese Method 1. Preheat oven at 180ºC. 2. Halve the potatoes horizontally and scoop out the flesh using a spoon to prepare potato shells. 3. Break eggs into a bowl. Add salt, crushed peppercorns and spring onion greens and whisk well. 4. Grate cheese into the mixture and whisk well. 5. Prepare a base for the potato shells using an aluminium foil and place the potato shells in it. Put these on a baking tray and fill them with the egg mixture. 6. Put the tray in the preheated oven and bake for 10 minutes or till the egg is fully cooked. 7. Serve hot. Chef’s tip: Use the flesh in any other recipe or as a mash by the side.
