BREADED CHICKEN MEATBALLS
Ingredients
2 cup fresh breadcrumbs
450 grams boneless chickenlegs, cut into small cubes
Oil for deep-frying
Crushed black peppercorns to taste
¼ teaspoon nutmeg powder
Salt to taste
2 teaspoons light soy sauce
1 tablespoon white wine vinegar
1 medium onion, finely chopped
1 tablespoon chopped garlic
2 tablespoons refined flour
2 eggs
Method
1. Heat sufficient oil in a deep pan.
2. Grind together chicken alongwith crushed peppercorns, nutmeg powder, salt, soy sauce and vinegar using an electric food processor till chicken is minced. Transfer in a bowl.Add onion and garlic and mix well.
3. Add ½ of the breadcrumbs to chicken mixture reserving the remaining onto a plate and mix well.
4. Take flour in a bowl. Break eggs in another bowl and beat well.
5. Dampen your palms with some water. Divide the chicken mixture into large equal portions and shape them into balls. Coat each ball with flour, dip in beaten eggs and coat with breadcrumbs.
6. Deep-fry prepared meatballs in hot oil till golden and crisp. Drain on absorbent paper.
7. Serve hot with shredded cabbage and carrot juliennes.
