Yet another case of some lesser known and unique recipes from the famous city of Kolhapur. Totally unheard of Dudhachi Amti is a flavourful accompaniment to steamed rice.
DUDHACHI AMTI
Ingredients
3½ cups raw milk (dudh)
Spice paste
1 tbsp white sesame seeds
¼ cup desiccated coconut
1 star anise
3 green cardamoms
8-10 black peppercorns
½ inch cinnamon stick
2 tsps coriander seeds
Amti
2 tbsps oil
1 bay leaf
1 medium onion chopped
1 tbsp ginger-garlic paste
1 large potato peeled and cut into ½ inch cubes
1½ tsps red chilli powder
2 tbsps chopped fresh coriander leaves
Salt to taste
To serve
Steamed rice
Salad
Method
1. Dry roast white sesame seeds desiccated coconut star anise green cardamoms black peppercorns cinnamon stick and coriander seeds in a non-stick pan till the coconut turns golden. Take the pan off the heat and allow to cool.
2. Transfer the roasted spices in a grinder jar and add 1 cup water and grind to a fine paste.
3. To make the amti heat oil in a deep non-stick pan. Add bay leaf and onion mix and cook till golden brown.
4. Stir in the ginger-garlic paste and cook for 1-2 minutes.
5. Add the potatoes ½ cup water mix cover and cook for 5-6 minutes. Add the ground paste mix and cook for 2-3 minutes.
6. Add the red chilli powder and mix well. Cook for 30 seconds.
7. Pour the milk and add the coriander leaves and mix well. Cook till it comes to a boil. Switch the heat off and transfer into serving bowls. Add salt before serving hot with steamed rice and salad.
