OVER LOADED POTATO SKINS Ingredients 4 medium potatoes, boiled 1 tablespoon oil 10-12 bacon strips, chopped Crushed black peppercorns to taste A pinch salt ½ teaspoon fresh thyme ¼ cup finely chopped spring onion greens + for garnishing Grated processed cheese as required Method 1. Halve the boiled potatoes horizontally, scoop out the flesh and reserve it alongwith the shells. 2. Preheat oven to 180º C. 3. Heat oil in a non-stick pan. Add bacon and sauté for 2-3 minutes. Add potato flesh, lightly mash and cook for 1-2 minutes. 4. Add crushed peppercorns and salt and mix. Add thyme and spring onion greens and mix well. 5. Fill the potato shells with bacon mixture and place them on the baking tray. Put some cheese on top of prepared shells. 6. Place the baking tray in preheated oven and gratinate till cheese melts. 7.
