LILI TUVAR NA TOTHA
Ingredients
2 cups fresh pigeon peas (tuvar dana)
3 tbsps ginger-garlic- green chilli paste
6 tbsps oil
4 dried red chillies stemmed
1 inch cinnamon
4-6 cloves
2 bay leaves
½ tsp carom seeds (ajwain)
A pinch of asafoetida (hing)
4 medium onions chopped + to sprinkle
2 cups chopped green garlic
4 medium tomatoes chopped
Salt to taste
1 tsp turmeric powder
4 tsps red chilli powder
4 tsps coriander powder
2 tsps cumin powder
2 tsps sugar
1 tsp garam masala powder
Sev to sprinkle
Lemon wedges for serving
Toasted bread slices for serving
Method
1. Heat oil in a pressure cooker. Add dried red chillies cinnamon cloves bay leaf caron seeds and asafoetida and sauté till fragrant.
2. Add onions and cook till translucent.
3. Add ginger-garlic-green chilli paste and sauté for 2-3 minutes.
4. Add green garlic and sauté for a minute.
5. Add tomatoes salt and cook till tomatoes are pulpy.
6. Add turmeric powder red chilli powder coriander powder and cumin powder and mix well.
7. Add tuvar dana sugar and mix well. Add 3 cups water and once the mixture comes to a boil close the lid and cook on high heat till the pressure is released 3 times.
8. Open the lid once the pressure settles completely.
9. Add garam masala powder and mix well.
10. Transfer in a serving bowl sprinkle sev onion and serve hot with lemon and toasted bread slices.
