SANDWICH PIZZA
Ingredients
8 white bread slices, edges trimmed
6-7 tablespoons mayonnaise
1 tablespoon green chutney
½ medium green capsicum, finely chopped
1 medium tomato, deseeded and finely chopped
¼ cup corn kernels, boiled + for spreading
Salt to taste
Butter as required
1 teaspoon tandoori masala
50 grams cottage cheese (paneer), cut into small cubes
1 cup mixed capsicum cubes
6-8 black olives, pitted and sliced
Grated mozzarella cheese for spreading
Method
1. To prepare stuffing, mix together 3-4 tablespoons mayonnaise, green chutney, green capsicum, tomato, ¼ cup corn kernels and salt in a bowl.
2. Preheat oven to 180̊ C.
3. Heat a non-stick tawa.
4. Apply some butter on one side of each bread slice.
5. Spread some stuffing on butter side of half of the bread slices and cover with remaining bread slices, butter side downwards.
6. Apply some butter on top of prepared sandwiches, place them on hot tawa and toast from both sides till golden brown. Transfer on the worktop.
7. To prepare pizza topping, mix together remaining mayonnaise and tandoori masala in a bowl.
8. Spread some tandoori-mayo mixture on top of toasted sandwiches, put some cottage cheese cubes, mixed capsicum pieces and black olives and spread some mozzarella cheese on top.
9. Place the sandwich pizza on a baking tray. Put the tray into the preheated oven and bake till the cheese melts.
10. Spread some corn kernels on a serving plate. Halve the sandwich pizza, place on the plate and serve hot.
