THAI POMELO SALAD Ingredients 250 grams pomelo peeled and cut into wedges ½ cup shredded cabbage ½ cup shredded purple cabbage ½ cup mixed coloured capsicums strips ¼ cup chopped spring onion greens 1 cup bean sprouts 2 tbsps chopped fresh mint leaves 2 tbsps shredded basil leaves + for garnish ¼ cup coarsely crushed roasted salted peanuts + for garnish Toasted black sesame seeds Dressing 1 tbsp finely chopped garlic 1½ tbsps brown sugar ½ tbsp finely chopped ginger ½ tsp palm sugar 1 tsp red chilli sauce 1 tsp soy sauce 1 tbsp blended sesame oil Salt to taste 2 tbsps creamy peanut butter 1 tbsp lemon juice Method 1. To make the dressing combine together garlic brown sugar ginger palm sugar red chilli sauce soy sauce blended sesame oil salt and peanut butter in a bowl. Add lemon juice and mix. 2. Take pomelo in a large bowl add cabbage purple cabbage capsicum spring onion greens bean sprouts mint leaves basil leaves and peanuts and drizzle the prepared dressing and gently toss till well combined. 3. Transfer the salad into a serving plate garnish with peanuts basil leaves and black sesame seeds. Serve immediately.
