CREAM CHEESE AND AVOCADO SANDWICH
Ingredients
Cream cheese for spreading
1 ripe avocado
8 multigrain bread slices
Lemon juice for drizzling
Crushed black peppercorns to taste
Salt to taste
Method
1. Spread some cream cheese on one side of each bread slice.
2. Halve and deseed the avocado and cut the flesh into thick slices. Scoop them out and thinly slice them.
3. To prepare one sandwich, arrange the avocado slices on the cream cheese side of one bread slice. Drizzle some lemon juice, sprinkle some crushed peppercorns and salt on top and cover with another bread slice with cream cheese side downwards.
4. Trim off the edges, cut into two equal triangles and serve immediately.
