Delightful Prawn Curry with Raw Mangoes is a traditional south Indian recipe of large prawns cooked in creamy coconut sauce. The tangy flavour imparted by the raw mangoes and the classic flavour of the coconut oil both make this curry delectable. So serve it at your next gathering along with some rice on the side.
PRAWN CURRY WITH RAW MANGOES
Ingredients
16-20 medium prawns peeled and deveined
3 medium raw mangoes
10-15 curry leaves
1 inch ginger cut into thin slices
4-5 green chillies slit
¼ tsp turmeric powder
1 tsp + 1 tbsp Kashmiri red chilli powder
Salt to taste
¾ cup scraped fresh coconut
2-3 shallots sliced
Tempering
3 tbsps coconut oil
½ tsp mustard seeds
¼ tsp fenugreek seeds
8-10 shallots sliced
2-3 tsps red chilli flakes
10-15 curry leaves
Cooked matta rice for serving
Method
1. Heat 2 ½ cups water in earthenware pot. Add raw mangoes curry leaves ginger green chillies turmeric powder1 tsp Kashmiri red chilli powder and salt and mix well. Cover and cook for 8-10 minutes.
2. Take coconut in a grinder jar. Add remaining Kashmiri red chilli powder shallots ½ cup water and grind to fine paste.
3. Add prawns to the raw mango mixture and cook for 2-3 minutes.
4. Add ground paste 2-3 tbsps water and mix well. Once the mixture comes to a boil switch the heat off.
5. For tempering heat coconut oil in a small pan. Add mustard seeds and once they start to splutter add fenugreek seeds shallots and cook till the onions turn golden brown.
6. Switch off the heat add red chilli flakes curry leaves and mix well.
7. Add this tempering to the curry and set aside for 10-15 minutes. Mix well.
8. Transfer in a serving bowl and serve hot with matta rice.
