APPLE CUSTARD IN RED WINE REDUCTION
Ingredients
1 medium red Washington Apple
2½ cups milk
½ cup red wine
½ tbsp butter
3 tbsps custard powder
5 tbsps castor sugar
Method
1. Boil 2¼ cups milk in a deep non-stick pan.
2. Deseed and chop Washington Apple into small pieces.
3. Heat a non-stick pan. Add apple pieces and butter.
4. Mix together custard powder and remaining milk in a bowl, add to boiling milk, mix and cook till it thickens, stirring frequently.
5. Add 3 tbsps castor sugar and red wine to apples-butter mixture and cook till the apple softens and wine is reduced.
6. Add remaining castor sugar to custard mixture, mix and cook till the mixture thickens. Switch off heat and cool.
7. Put custard in individual wine glasses filling ½ and put with some red wine apple reduction on top.
8. Serve.
