MALWANI SUKKA MUTTON Ingredients 400grams mutton on bones, cut into pieces ½ teaspoon turmeric powder Salt to taste 3 tablespoons oil 2-3 dried red chillies 1 inch cinnamon 1 black cardamom 3-4 black peppercorns 2-3 cloves 2 tablespoons poppy seeds 2 tablespoons fennel seeds 1 teaspoon cumin seeds 1-2 green cardamoms 1 teaspoon caraway seeds ½ cup dried gratedcoconut 1 medium onion, chopped 2 tablespoons green paste Method 1. Heat mutton mince in a non-stick pan. Add turmeric powder and salt along with 2 cups water, mix and bring to boil. Cover and cook on low heat till mutton is half done. 2. Heat 1 tablespoon oil in a non-stick pan. Add dried red chillies, cinnamon, black cardamom, peppercorns, cloves, poppy seeds, fennel seeds, cumin seeds, green cardamoms and caraway seeds and sauté till fragrant. Add coconut and sauté on low heat till golden.Remove from heat and cool. 3. Grind the prepared spice-coconut mixture with some water to a coarse paste. 4. Heat remaining oil in a non-stick pan. Add onion and sauté till golden. Add green paste, mix and cook on high heat for a minute. Add prepared paste, mix and cook on high heat for a minute. 5. Add mutton mixture, mix, cover and cook on low heat for 15 minutes. 6. Serve hot garnished with lemon slice and a coriander sprig.
