A saffron infused sweet rice dish made for special occasions. Sprinkled with nuts and dried fruits. A royal dessert indeed.
ZARDA PULAO
Ingredients
A large pinch of saffron
2 cups Basmati rice washed soaked for 30 minutes and drained
¼ cup ghee
2-4 green cardamoms
1 inch cinnamon stick
10-12 cashew nuts
2 tbsps raisins
1½ cups sugar
½ tsp green cardamom powder
Blanched peeled and slivered pistachios for garnish
Silver warq for garnish
Method
1. Heat ghee in a handi. Add green cardamoms cinnamon stick and sauté till fragrant.
2. Add cashew nuts and mix well. Cook till light golden. Add raisins mix and cook till they puff up.
3. Add the soaked Basmati rice and mix with light hand. Add saffron and mix.
4. Pour 3¾ cups water mix and cook till the mixture comes to a boil and cook for 8-10 minutes. Add sugar and mix with light hand till well combined.
5. Add green cardamom powder and mix.
6. Reduce the heat to low cover the handi with a lid and continue to cook for 8-10 minutes or till the rice is cooked completely. Switch the heat off and allow the mixture to rest for 5-10 minutes.
7. Transfer into a serving bowl garnish with blanched pistachios and silver warq.
