BOMBIL FRY
Ingredients
Bombay duck (bombil), chopped and soaked in turmeric powder and salt
1 ½ tablespoons coriander-garlic paste
1 tablespoon mix masala
¼ teaspoon turmeric powder
Oil for shallow-frying
2-3 tablespoons semolina (sooji/rava)
Onion rings for garnishing
Lemon slices for garnishing
Mint leaves for garnishing
Method
1. Mix together Bombay duck, coriander-garlic paste, mix masala, turmeric powder and mix well.
2. Heat oil in a non-stick pan. Spread semolina over a plate, divide the prepared mixture into equal portions, coat in semolina and shallow-fry till golden-brown and crisp. Turn over to the other side and shallow-fry till golden-brown and crisp.
3. Remove from heat and transfer to a serving plate.
4. Garnish with onion rings, lemon slices, mint leaves and serve hot.
