BAKED VADA PAV Ingredients Aloo bhaji as required 250 grams refined flour + for dusting Oil for greasing 1 tablespoon fresh yeast A pinch + 1 teaspoon castor sugar Salt to taste 20 grams melted butter Milk for brushing Method. 1. Preheat oven at 180ºC. Grease a baking tin with some oil. 2. Take yeast in a bowl. Add a pinch castor sugar and 1-2 tablespoons warm water, mix and set aside to activate. 3. Sift flour in a bowl. Add 1 teaspoon castor sugar, salt and activated yeast and mix well. Add 125 ml water and knead into a dough. Transfer the dough on a worktop and knead again. Add butter and knead into a soft dough. 4. Dust a bowl with some flour, place the dough in it, cover with a cling film and set aside to prove for 15-20 minutes. 5. Transfer the dough on a worktop and knock back. Divide it into equal portions and shape them into balls. Stuff each ball with some aloo bhaji and shape them into pavs. Place them in the greased tin, cover with damp muslin cloth and set aside to prove for 10 minutes. 6. Brush some milk on the pavs. Put the tin a preheated oven and bake for 15-20 minutes. Remove from oven and cool. 7.
