KHANDESHI KADHI
Ingredients
1 cup yogurt
2 tbsps gram flour (besan)
1 tbsp sorghum (jowar) flour
Salt to taste
2 tbsps oil
½ tsp mustard seeds
1 tsp cumin seeds
¼ tsp asafoetida (hing)
8-10 curry leaves
1½ tbsps crushed ginger-garlic-green chillies
1 tbsp chopped jaggery
2 tbsps chopped fresh coriander leaves
Method
1. Take yogurt in a bowl. Add gram flour sorghum flour and whisk well.
2. Add salt 3 cups water and mix well.
3. Heat oil in a pan. Add mustard seeds and once they start to splutter add cumin seeds asafoetida and mix well.
4. Add curry leaves crushed ginger-garlic- green chillies and sauté for 30 seconds.
5. Add yogurt mixture and mix well. Once it comes to a boil add jaggery lower the heat and cook for 10-12 minutes.
6. Sprinkle coriander and mix well.
7. Transfer into a serving bowl and serve hot.
