CHERRY PULAO
Ingredients
200 grams fresh cherries halved and deseeded + whole for garnish
1½ cups basmati rice soaked
2 tbsps ghee
4-5 cloves
6-8 black peppercorns
4-5 green cardamom
2 tbsps raisins
Salt to taste
A few saffron strands
Candied cherries cut into slivers for garnish
Method
1. Heat ghee in nonstick deep pan add cloves black peppercorns and green cardamom and sauté for minute.
2. Add the ¾ cup cherry and sauté for 1-2 minutes; add in the raisins continue to cook for 1-2 minutes.
3. Add the soaked rice and sauté for minute stir in the 3 cups water salt and saffron strands and mix well.
4. Cover and cook on medium heat for 8-10 minutes.
5. Transfer the rice on a serving plate and serve hot.
