HASSELBACK POTATOES
Ingredients
4 large potatoes
2 tablespoons olive oil
Salt to taste
Crushed black peppercorns to taste
7-8 bacon rashers
7-8 cheese slices
Chopped chives for garnishing
Method
1. Preheat oven at 180ºC.
2. Cut the potato into slices without cutting through and place into a bowl. Add olive oil, salt and crushed peppercorns and rub well in the gaps too.
3. Place the potatoes on the baking tray, put the tray in the preheated oven and bake for 25-30 minutes.
4. Cut bacon rashers into small pieces. Cut cheese slices into 4 pieces.
5. Stuff the baked potatoes alternatively with a cheese piece and a bacon piece. Place them back on the baking tray, put the tray in the preheated oven and bake till the cheese melts.
6. Garnish with chives and serve immediately.
Preparation Time: 15-20 minutes
Cooking Time: 30-40 minutes
