Delicious sandwiches with spicy grilled chicken, mayonnaise and salad mixture bursting with mexican flavours.
TEX MEX CHILLI SANDWICH
Ingredients
2 boneless chicken breasts
8 brown bread slices
½ cup tomato puree
1 tablespoon brown sugar
Salt to taste
1 teaspoon Mexican seasoning
Crushed black peppercorns to taste
1½ tablespoons garlic-green chilli paste
2 tablespoons tomato ketchup
1 teaspoon worcestershire sauce
1 tablespoon paprika
1 tablespoon oil
1 tablespoon butter
4 tablespoons mayonnaise + for drizzling
Few mixed salad leaves
Method
1. Mix together tomato puree, brown sugar, salt, Mexican seasoning, crushed peppercorns, garlic-green chilli paste, tomato ketchup, worcestershire sauce and paprika in a bowl.
2. Add chicken breasts, mix well and set aside to marinate for 15-20 minutes.
3. Heat oil and butter in a non-stick grill pan. Place marinated chicken breasts in it and grill till fully cooked and evenly done from both sides. Remove from heat and cut into slices.
4. Spread 1 tablespoon mayonnaise onto 4 bread slices. Top with some mixed salad leaves and some grilled chicken slices.
5. Drizzle some more mayonnaise on top, cover with remaining bread slices and halve.
6. Serve immediately with French fries.
