ZUCCHINI FRITTERS
Ingredients
1 medium green zucchini, grated
1 egg
2-3 tablespoons refined flour
1 tablespoon parmesan cheese powder
Salt to taste
6-8 fresh basil leaves, chopped
½ teaspoon nutmeg powder
Crushed black peppercorns to taste
1 teaspoon baking powder
Oil for shallow-frying
Method
1. Take egg in a bowl and whisk well. Add flour, zucchini, parmesan cheese, salt, basil, nutmeg powder and crushed peppercorns and mix. Add baking powder and mix well.
2. Heat some oil in a non-stick pan. Put small dollops of batter and shallow-fry on medium heat till golden from both sides. Drain on absorbent paper.
3. Serve hot.
Preparation Time: 5-8 minutes
Cooking Time: 8-10 minutes
