We're exploring Gujarati cuisine with 'Hare Moong Ki Chaaswali Khichdi'. This protein-packed dish combines whole green moong dal and creamy buttermilk to create a flavorful and satisfying meal.
HARE MOONG KI CHAASWALI KHICHDI
Ingredients
1½ cups whole green gram (sabut moong) soaked for 3-4 hours
2½ cups buttermilk (chaas)
1 cup rice soaked for ½ hour
1 tsp ghee
1 tsp cumin seeds
4-5 cloves
2 medium carrots cut into 1 inch pieces
4-6 medium cauliflower florets cut into small florets
3-4 green chillies slit
½ tsp turmeric powder
Salt to taste
Method
1. Heat ghee in a pressure cooker add cumin seeds and cloves and sauté for a minute.
2. Add carrots cauliflower moong green chillies turmeric powder and rice. Mix well and add chaas and salt. Mix well cover and cook till 2 whistles are given out.
3. Lower heat and cook for 5-10 minutes more.
4. Serve hot.
