QUINOA AND VEGETABLE PULAO Ingredients 1 cup quinoa, soaked for 1 hour 7-8 button mushrooms ¼ cup green peas 1½ tsps oil 2 spring onions with greens 1 tsp cumin seeds 4-5 cloves 5-6 garlic cloves 4 green chillies 2 cups vegetable stock Salt to taste 1 cup milk Method 1. Heat oil in a non-stick pan. 2. Slice spring onion bulbs. Reserve the greens. 3. Add cumin seeds, cloves and garlic cloves to the pan. 4. Slit green chillies without cutting through and add alongwith sliced spring onion bulbs and saute well. 5. Chop spring onion greens and add. 6. Quarter mushrooms and add. Toss and saute well. 7. Add quinoa and mix well. Add vegetable stock, salt, stir to mix and cook. 8. Add green peas and mix well. Add milk, stir to mix, cover and cook on medium heat till fully done.
