This flavourful semolina and almond phirni is an easy dessert. Simple pleasures often always brighten up anyone’s day.
SEMOLINA AND ALMOND PHIRNI
Ingredients
¼ cup almonds
½ cup semolina (rawa)
4½ cups full fat milk
A large pinch of saffron
½ cup sugar
2 tsps rose water
Slivered almonds to serve
Silver warq for garnish
Method
1. Thoroughly wash the semolina with sufficient water for 2-3 times.
2. Put the almonds in a blender jar and blend to a fine powder.
3. Bring milk to a boil in a deep non-stick pan.
4. Add saffron and mix well. Stir continuously and cook for 3-4 minutes.
5. Add the semolina and almond powder continuously mix and cook till the mixture thickens.
6. Add sugar mix and cook till it melts. Add rose water and mix well.
7. Switch the heat off and transfer the mixture into individual serving earthen bowls. Sprinkle slivered almonds place them in the refrigerator for 1-2 hours or till cooled completely.
8. Garnish with silver warq. Serve chilled.
