CHICKEN GARLIC RICE
Ingredients
300 grams boneless chicken, cut into 1 inch pieces
2 tablespoons chopped garlic
3 cups cooked Basmati rice
2-3 tablespoons oil
1 medium onion, sliced
1 inch ginger, cut into juliennes
Salt to taste
Crushed black peppercorns to taste
1½ tablespoonssoy sauce
1 tablespoon rice vinegar
1 teaspoon castor sugar
1 teaspoon garlic powder
2 stalks spring onions, finely chopped
Chinese sauce for serving
Method
1. Heat 1 tablespoon oil in a non-stick wok. Add onion and sauté on high heat till golden brown. Add ginger and sauté for 1 minute.
2. Add chicken and sauté on high heat for 1-2 minutes. Add salt and mix. Add crushed peppercorns and soy sauce, mix, cover and cook on low heat for 4-5 minutes.
3. Add rice vinegar and castor sugar and mix. Add garlic powder and mix. Increase heat, add rice, mix well and cook for 1 minute. Cover and cook for 2 minutes.
4. Heat remaining oil in a tempering pan. Add garlic and sauté till golden brown.
5. Add fried garlic to cooked chicken rice, cover and keep for 1 minute. Add spring onions and mix well.
6. Serve hot with Chinese sauce.
