STICKY DATE PUDDING Ingredients 1 cup chopped dates 1½ cups refined flour + for dusting 1 teaspoon baking soda 90 grams butter + for greasing 1 cup brown sugar 1 teaspoon vanilla essence 2 eggs Toffee sauce 1 cup brown sugar 1 cup fresh cream 2 tablespoons butter Method 1. Preheat oven at 180ºC. Grease a pudding mould with some butter and dust with some flour. 2. Boil 1 cup water in a non-stick pan. Bring it to boil and switch off the heat. 3. Take dates in a bowl, add hot water and baking soda and mix well. Set aside till soft and pulpy. 4. Cream butter and brown sugar with an electric beater till light and fluffy. 5. Add vanilla essence and blend well. Add eggs, one by one, and blend again. Add date mixture and blend nicely.Add flour and fold gently. 6. Pour the prepared mixture in the pudding mould, place the mould in the preheated oven and bake for 45-50 minutes. 7. To make toffee sauce, heat brown sugar in a non-stick pan and cook till it caramelizes. Add cream and mix well. Add butter and mix well. 8. Demould the pudding on a serving plate. Cut a slice.Top it with a scoop of vanilla ice cream and drizzle the prepared toffee sauce over. Serve immediately.
