MATHRI
Ingredients
2 cups refined flour
Oil for deep-frying
Salt to taste
Crushed black peppercorns to taste
2 tablespoons ghee + for spreading
Method
1. Heat sufficient oil in a kadai.
2. Take flour in a parat. Add salt, crushed peppercorns and ghee and mix well. Add sufficient water gradually and knead into a stiff dough. Set aside for 25 minutes.
3. Transfer the dough onto the worktop, spread some ghee and roll out to make a thin sheet and create insertions.
4. To make moon shape, cut half sheet into roundels using a small cookie cutter, place discs over each other and cut out half using the same cookie cutter.
5. To make round shape, cut the remaining sheet into roundels using a medium size cookie cutter.
6. Deep-fry mathris in hot oil on low heat till light golden and crisp. Drain on absorbent paper and cool.
7. Store.

Cooking Time: 8-10 minutes
