A popular starter recipe from the Chinese cuisine. Shallow fried corn cakes is a recipe that you must try ! CORN CURD Ingredients 1 tin (400 grams) cream style sweet corn Oil for frying + for greasing Salt to taste White pepper powder to taste 2 tablespoons finely chopped spring onion greens ½ cup + 2 tablespoons cornflour + for dusting Method 1. Grease a barfi tray with some oil. 2. Heat a non-stick pan. Add sweet corn, salt, pepper powder, spring onion greens, cornflour and ¼ cup water, whisk and cook for 5 minutes. 3. Transfer the mixture in the greased tray, cool to room temperature and refrigerate for 2-3 hours. 4. Heat some oil in a non-stick pan. 5. Cut the mixture into squares, dust with some cornflour and fry in hot oil till golden brown. Drain on absorbent paper. 6. Serve hot with Schezwan sauce.
