A wonderful golden deep fried evening snack made with flattened rice cheese and potato tastes incredibly perfect for monsoon! POHA CROQUETTES Ingredients 1½ cups pressed rice (poha) 2 medium potatoes boiled peeled and grated 1 medium onion finely chopped ½ cup green peas blanched 1 teaspoon shredded curry leaves 2 green chillies finely chopped 1 teaspoon mustard seeds 1 tablespoon finely chopped fresh coriander leaves ½ teaspoon red chilli powder ¼ teaspoon turmeric powder Salt to taste Refined flour slurry as required Dried breadcrumbs for coating Oil for deep-frying Method 1. Soak pressed rice in some water and drain. 2. Mix together potatoes onion green peas curry leaves green chillies mustard seeds coriander leaves chilli powder turmeric powder salt and pressed rice in a bowl. 3. Divide the mixture into equal portions and shape into croquettes. 4. Heat sufficient oil in a kadai. Deep-fry croquettes till golden brown. Drain on absorbent paper. 5. Serve hot with green chutney.
