MULTIGRAIN BROCCOLI TKKA WRAP
Ingredients
10-15 medium broccoli florets blanched
4 multigrain tortillas
½ cup yogurt
2 tbsps fresh cream
1 tsp green chilli paste
¼ tsp white pepper powder
¼ tsp green cardamom powder
Salt to taste
1 tbsp lemon juice
¼ cup grated processed cheese
1 tbsp roasted gram flour
Butter for basting
Cream cheese for applying
Green chutney as required
Lollo rosso lettuce leaves as required
Carrot strips for sprinkling
Beetroot strips for sprinkling
Pickled onion rings for sprinkling
Chips to serve
Salad to serve
Mint mayo to serve
Method
1. Take yogurt in a large bowl add fresh cream green chilli paste white pepper powder green cardamom powder salt and lemon juice and whisk well. Add processed cheese and roasted gram flour and mix well.
2. Add broccoli and mix well. Set aside for 10-15 minutes.
3. Preheat the oven at 180ºC.
4. Place the broccoli on a greased baking tray. Bake for 10-15 minutes baste with butter in between.
5. To make a wrap apply some cheese spread on a multigrain tortilla and add a portion of the green chutney and spread them both evenly. Place a few lollo rosso lettuce leaves and arrange a few broccoli pieces on it. Sprinkle some carrot strips beetroot strips and pickled onion rings on top. Fold it into a wrap.
6. Diagonally halve the wrap and serve immediately with chips salad and mint mayo.
