SHISH TAOUK PARCELS
Ingredients
250 grams boneless chicken breasts
2 tablespoons yogurt
1 tablespoon chopped garlic
¼ teaspoon green cardamom powder
½ teaspoon cumin powder
1 teaspoon paprika/red chilli powder
Salt to taste
2 teaspoons lemon juice
Oil for grilling
Iceberg lettuce cups for serving
Onion rings for serving
Lemon slices for serving
A few fresh parsley sprigs
Yogurt dip
3-4 tablespoons yogurt
½ tablespoon chopped fresh parsley
1 tbsp chopped fresh mint leaves
1 green chilli, finely chopped
A pinch cumin powder
Method
1. Cut chicken into small cubes and transfer in a bowl.
2. Add yogurt, garlic, cardamom powder, cumin powder, paprika/chilli powder, salt and lemon juice and mix well.
3. Skewer the marinated chicken pieces onto satay sticks.
4. Heat some oil in a non-stick grill pan. Place the satay sticks and grill till golden brown and evenly cooked.
5. To make yogurt dip, mix together yogurt, parsley, mint leaves and green chillies in a bowl. Add cumin powder and mix well.
6. Line a serving platter with lettuce cups. Transfer the grilled chicken cubes in them. Add some onion rings, lemon slices and fresh parsley sprigs.
7. Serve immediately with the prepared yogurt dip.
