SOYA GALOUTI Ingredients 2 cups soya granules, soaked and squeezed 3 tablespoons ghee 1½ tablespoons ginger-garlic paste 3 tablespoons gram flour (besan) 1 teaspoon red chilli powder 1 teaspoon garam masala powder ½ teaspoon mace (javitri) powder ¼ teaspoon green cardamom powder ½ cup browned onion paste 1 teaspoon screwpine (kewra) essence Salt to taste Few saffron strands, soaked in water Chopped fresh coriander leaves for garnishing Curd onion rings for serving Lemon wedges for serving Method 1. Heat 1 tablespoon ghee in a non-stick pan. Add ginger-garlic paste and sauté for 2-3 minutes. 2. Add gram flour, mix and sauté till fragrant. Add soya granules, mix and sauté for a minute. 3. Add chilli powder, garam masala powder, mace powder and cardamom powder, mix and sauté for 4-5 minutes. Remove from heat and cool down to room temperature. 4. Grind soya mixture with browned onion paste and screwpine essence to a smooth paste. Transfer into a bowl, add salt and saffron along with the water and mix well. 5. Heat remaining ghee in a non-stick pan. 6. Dampen your palms, divide the mixture into equal portions and shape them into thin tikkis. 7. Place the tikkis in the pan and shallow-fry, flipping, till golden brown on both the sides. 8. Garnish with coriander leaves and serve hot with curd onion rings and lemon wedges.
